Today's culinary adventure comes courtesy of my roommate's birthday barbecue a few weeks ago. We had a group of friends over to celebrate, and wanted to do something delicious and easy. My answer? Tacos. Everyone loves tacos and you can make them in endless ways! I stepped into the kitchen at 9:45am that Saturday and didn't sit down until around 6pm. Slicing, chopping, mixing, smashing, grilling, I did it all! It was actually very productive. I had to break out a stand juicer I've had in my room for years and never used because I had so many limes to juice. It was a lime slaughterhouse by the time I was done.
When people arrived we carried everything downstairs to the barbecue and I started grillin' meat.
The skirt steak I made was marinated in one of my favorite marinades by Tyler Florence. It's sweet, it's spicy, it's tenderizing, and delicious. (Tyler's Ultimate Fajitas).
The chicken...oh wow the chicken. My roommate had once given me a gift of spice blends from a small shop in Colorado. I figured I'd just put some of the adobo blend in a bag with some oil and the chicken and see how it turned out. The answer? Probably some of the best chicken I've ever made.
Toppings included grilled onions and peppers, jalepenos, onions, tomatoes, lettuce, cheese, a spicy yogurt sauce, and avocado.
I bought almost 8 pounds of meat, and by the end of the party it was all finished.
In addition to the huge pitcher of margaritas and the bowl of homemade guacamole (good job, people!).
Dan wanted hot wings, so I attempted those on the grill. Not a stellar success, but still pretty tasty.
I also decided we needed a vegetable, and what says summer more than corn? I
It was delicious, exhausting, and at the end of the night I was a cross between awake, exhausted, and pleasantly buzzed. And I went to sleep soon after. Definitely one of the best parties we've had!
